Tasting Notes

A single educational cask, matured in Warehouse 13, Rack 14, Row C, floor level, dunnage racking. Distilled from Golden Promise barley, matured in refill American oak cask, bottled at 51.0%

Winter Sun/Light Lemon.

Hints of cinnamon and grapefruit segments.

Lemon and honey, fresh melon and gooseberry. Floral notes of Linden & Acacia. The oak and malt mingle superbly but they are very much in a supporting role. The fruits of slow distillation are luscious, succulent and sweet. WOW!!

A single cask chosen from the coldest and dampest part of the warehouse as a stand alone example to compare with a similar cask matured in the hotter more dry environment of the warehouse roof (2% higher alcohol).

Inquisitive. Anal. Compare and contrast.
