The Southside of Islay

  • 60ml The Botanist Gin
  • 2 fresh kafir lime leaves
  • 5 mint leaves
  • 15ml Lime juice
  • 20ml Simple Syrup

It was said that the gangsters on the south side of Chicago were partial to the combination of gin, lime & mint. Given the typical contents of their violin cases, I’m not one to argue with them. For my take on the classic, I’ve added a couple of kaffir lime leaves, some common mint and a healthy swig of the oh so tasty, The Botanist gin. The fresh kaffir lime lifts the herbal notes of the gin and accentuates the citrus characters.


Add all ingredients to a shaker, top with ice and hard shake for 15 seconds. Fine strain into a coupette and garnish with 3 small mint leaves.

For this drink I wanted to stay close to home and see what I could come up with. The climate of the central coast lends is particular agreeable with both herbs and kaffir lime trees, and I am fortunate to have both on my verandah.
