Pom Gin

By Jane Carswell

Ingredients:

This drink was named by Kathryn, after she created it for The Botanist gin tour. The ‘pom’ is for pomegranate, the principal ingredient in grenadine, although our ‘All-Islay Grenadine’ has never been anywhere near a pomegranate and uses local seasonal ingredients instead. The irony!

It’s basically a Clover Club cocktail, 2/3 gin 1/3 grenadine, shaken.

  • 40ml Botanist Gin
  • 20ml Grenadine
  • 15ml lemon juice
  • half an egg white

Method:

Shake all the ingredients without ice for 30 seconds, then with ice until thoroughly chilled. Strain into a coupe glass and garnish – we used a lavatera flower (mallow family) from the garden here at the distillery.
