Islay Bramble

Ingredients:

We wanted to make a Islay bramble cocktail with actual brambles rather than the classic Creme de Mure for our gin tours. Now is the very season for them, and they happen to be an amazing fruit, in my opinion.

  • 40ml gin
  • 20ml lemon juice
  • 15ml sugar syrup
  • 15ml bramble syrup

Method:

Keeping the bramble syrup back, shake the other ingredients with ice. Pour into a rocks glass over crushed ice, and drizzle the bramble syrup over the top. For garnish, we used some freshly picked berries and a young bramble leaf – they are nice, fruity, tiny bit tannic.


Foraging notes:

To make bramble syrup – pick a kilner jar of brambles, cover with water and simmer for 5 minutes. Strain the liquid through a fine conical seive or jay cloth. Weigh the liquid and add an equal weight of sugar, stir until disolved. You can fortify this with gin to 18%, if you like, so as to keep it indefinitely; the ratio of about 3 parts syrup to 2 parts 46% gin would work.
