Ficus Sour

Ingredients:

A classic Gin Sour, with a South Coast twist. The Botanist Gin infused separately with Ficus macrophylla and Ficus coronata figs. The sweet component is a simple syrup infused with F.macrophylla figs. The garnish is a ‘fig fizz’ and brûléed half fig (both F.coronata figs).

F.macrophylla Gin

  • 250ml The Botanist Gin
  • 8 F.macrophylla figs quartered
  • left to infuse for 14 days (refrigerate)

F.coronata Gin

  • 250ml The Botanist Gin
  • 15 F.coronata figs halved
  • left to infuse for 14 days (refrigerate)

Method:

Wisk in powdered figs until combined and set. Blitz to desired textureBrûléed half fig: One halved F.coronata fig dipped in sugar and torched until sugar is caramelised.


Foraging notes:

F.macrophylla- medium sized fruit. Dark purple and soft to the touch when ripe. Flesh is soft and full of moisture. Very tart. F.coronata- small sized fruit. Brown and soft to the touch when ripe. Covered in soft, fine hair. sap from broken stems white, sticky and mildly irritating to the skin. Avoid contact with eyes. Taste is very sweet with a slight tartness to finish. Very palatable.
