Ingredients:

The Botanist, very chilled, on the rocks, with a small handful of locally picked whin (gorse) flowers gently crushed. A buttery coconuty alternative to a citrus slice.


Foraging notes:

Foraging around the roadsides of the Rhinns we stopped to pick some whin, also known as Gorse. Whin is a tricky flower to pick…it’s a prickly soul and without careful handling and maybe a pair of gloves it can have the forager sending the air blue! After some careful picking of the bright yellow flowers we gently bashed them and added to The Botanist and plenty of ice. In the height of summer the island is wild with the bright yellow flowers emitting a rich coconut and honey scent.
