  • Infused The Botanist gin
  • 1tsp basil liquor
  • 20ml cocchi
  • 10ml gorse/barberry syrup
  • 2 – 3 drops Octomore Bitters
  • Tonic water



Stir the gin, cocchi, gorse/barberry syrup and Octomore bitters together in a mixing glass. Strain into a chilled glass. Top up with tonic.

Foraging notes:

The Botanist gin was infused with lime, larch and bladderwrack.


Tim Michel of Bar Capitol, Luzern, said he had never seen so many plants before.

The simple syrup he made used the bright blossoms from gorse which is all over Islay in Spring, and deep yellow orange Berberis “barberry” flowers, from the bush which grows in the Academy garden – which is just coming out. Other things, he found in the cupboard…
