 We use four varieties of barley, exclusively
Scottish grown: Optic, the main variety used; Golden Promise
– a past favourite; Chalice for Islay Grown and organic
production and Bere – the original barley introduced by
the Vikings.
In addition, we use six different farms’
production (ten different ‘terroirs’) which are kept separate from
field to cask:
Kentraw Farm – Islay
Rockside Farm- Islay
Kynagarry Farm - Islay
Coulmore Farm – Ross-shire (4 separate fields)
Coulblair Farm – Black Isle
Tullibardine Mains Farm - Perthshire
