This
is one of the many warehouses, right on the Atlantic Ocean, where
Bruichladdich ‘New Spirit’ – as it is at this stage officially known – will
mature to become Bruichladdich Islay Single malt. All Bruichladdich is
matured on Islay – the only distillery to do so.
The
casks are stored two high on an earth floor. In here the damp atmosphere
impregnated with salt from the winds lashing the coast is absorbed by the
maturing whisky; at the same time spirit slowly evaporates through the oak
in to the air – the Angel’s Share – reducing the alcoholic strength as the
years go by. 30 year old whisky will be about 50% alcohol.
Each
warehouse has a slightly different influence on the maturing spirit. Low
roofed warehouses tend to be hotter in the summer and colder in winter than
high ones; some are damper than others – while some are closer to the sea
and are more exposed. These factors will affect the maturation of the spirit
in a slight way.
