map shows where the Filling Store is in the Distillery:
From
the spirit safe, the 70% alcohol is stored in a tank (Spirit Receiver)
before suitable quantity has been obtained for cask filling to occur. Here
the Chairman is filling cask number 2.
Only
oak casks are used for aging whisky; here we see a Butt (500 litres of pure
70% alcohol) , a Hogshead (250 litres) and a Barrel (190 litres)
The
filled casks, their exact contents registered for Her Majesty’s Customs &
Excise, are then rolled away for maturing.
