map shows where the Still House is in the Distillery:
There
are four copper stills, two larger wash and two smaller spirit stills. This
is the top third of one of the larger Wash Stills. One ‘wash back’ fills two
‘wash’ stills. Note the unusually tall neck of the still, responsible for
the particularly fine. Pure and elegant spirit produced here.
The
Alcohol is vaporised, and after passing through a condenser - a tower
containing a series of tubes, filled with cold water from the burn – emerges
in to the ‘Spirit Safe’ at about 30% alcohol. This is repeated again using
the smaller spirit stills to achieve 70% alcohol. One ‘wash still’ fills two
‘spirit stills’
The
Spirit Safe. Here, Duncan (on the right), and Jim have just decided, after
testing the strength and clarity, to redirect the spirit from the blue
rimmed receptacle (where the undesirable, impure ‘feints’ and ‘fore shots’
are collected) to the black rimmed receptacle, denoting that the desirable
‘Middle Cut’ has been obtained. The former will be redistilled along with a
fresh batch of ‘wash’. Actually, this was the exact moment of the first
spirit produced at Bruichladdich on 29th May 2001.
