Maturing
The oak cask is a semi-permeable membrane, allowing spirit to evaporate away (The Angel’s Share) and surrounding air to replace it in a form of gentle micro-oxygenation. This process slowly transforms flavour compounds, notably the aldehyde group, into more desirable elements associated with mature spirit.
